Cooking Directions:
In a large skillet fry together the onions, peppers and cubed potatoes until they are cooked through and golden brown. In a separate skillet pour in beaten egg batter and fry up scrambled eggs. During last minute of eggs cooking top with cheese and cover to melt. Top with fresh chopped sprig of cilantro. Fry the bacon and crumble. Assemble the tortillas by spooning potato, onion mixture with egg and bacon. Top burritos with sour cream, salsa or your favorite toppings.
