10-12 Flour Or Corn Tortillas
1 1/3 Tablespoons Extra Virgin Olive Oil
1 Small Onion, Chopped
2 Habanero peppers, Chopped
10 Thick Hickory Cooked Bacon, Crumbled
2 Small Tomatoes, Peeled, Sliced
Vegetable Oil
Guacamole [Optional]
Sour Cream [Optional]

Cooking Directions:
First thing to do is go ahead and heat up the skillet with some hot oil. Saute the onions and habanero peppers until onions are glazed. Stir in sliced tomatoes and cook for 1 more minute. Brush the tortillas with the olive oil. Heat up the tortillas in the oven, Place a spoonful of fulling and crumbled bacon in to each tortillas. Roll up tight and secure with a toothpick. Heat up 1/2 inch deep oil in a large skillet over medium high heat. Add the rolled tortillas and submerge in the hot oil, be careful for the sizzle and popping of oil. Now fry those taquitos up for a few minutes until they are golden brown and crispy. Remove form skillet and place on a paper towel to drain. Serve the taquitos hot with optional dipping sauce. Enjoy.
