Ingredients:
3 Pounds Pork Butt Or Shoulder, 1 Inch Cubes
3 Tablespoons Sifted Flour
4 Garlic Cloves, Minced
4 Tablespoons Hot Chili Powder
1 1/2 Teaspoon Fresh Ground Oregano
1/2 Teaspoon Ground Cumin
2/3 Teaspoon Table Salt
2 Tablespoons Vegetable Oil
2 1/3 Cups Boiling Water

Cooking Directions:
In a large skillet or sauce pan, heat up the vegetable oil on medium high heat. Add the flour and cook till brown. Stir in the hot chili powder and slowly add the water until lumps are removed. Add the minced garlic, ground oregano, cumin salt and pepper. Leave uncovered and simmer cook for 15 minutes. After 15 minute's remove from heat and set aside. Once mixture has cooled down marinate the pork in that chili mixture for at least 10 hours, over night is best. Once done, Preheat your oven to 325 degrees, pork will take about 4 hours to cook. [maybe more] When the pork is done it will be very juicy, tender and fall apart.
