Ingredients:
2 Pounds Ground Pork
1 Tablespoon Vegetable Oil
1 Large Green Pepper
1 Large Jalapeno Chile, Chopped
1 Large Onion, Chopped
1 Can Salsa [Your Choice]
1 Cup Fresh Shucked Whole Corn
2 Cups 2 % Milk
1 Can Vegetable Broth
1 Cup Yellow Or White Cornmeal
1 1/4 Cup Pepper Jack Cheese

Cooking Directions:
In an oven safe skillet, heat till hot. Add ground pork and cook until done, about 6 to 7 minutes. Once done transfer ground pork to a bowl and wipe out skillet and leave hot. Add oil and heat on medium high heat, add jalapeno, green peppers and chopped onion, cook uncovered for 10 minutes until golden brown but soft. Place pork back in skillet and add salsa and fresh corn, bring to a rolling boil on high heat. Reduce to a low simmer uncovered for 5 minutes. Longer if you want it thicker. In a saucepan heat the milk and broth to a rolling boil on high heat. Reduce to a low simmer and whisk in cornmeal slowly. Continue stirring for 5 minutes sauce will thicken rapidly. Spoon cornmeal mixture over the ground pork mixture and sprinkle cheese on top. Now place the oven safe skillet in oven on top rack at 400 degrees. Brown the top, 5 to 6 minutes. Now this wonderful dish is ready to serve.
