6 1/2 Inch Tender Pork Loin Chops
1 Large Bell Pepper, Seeded And Sliced
1 Package Taco Seasoning
1 Tablespoon Extra Virgin Olive Oil
3/4 Cup Uncooked White Rice Or Quick Rice
1 3/4 Cups Cold Water
1 Can Tomato Sauce
1/2 Cup Shredded Cheddar Cheese
1/2 Cup Pepper Jack Cheese

Cooking Directions:
Place half the taco seasoning in a large zip lock bag and add pork chops, coat well. Heat oil in a large skillet over medium high heat. Add pork chops and cook until golden brown. In a large baking dish add the rest of the taco seasoning, tomato sauce, water and rice. Place the pork chops in the baking dish on top of the rice mixture. Place the green bell peppers on the top, cover and bake at 350 degrees for 40-45 minutes. Once the dish is done sprinkle the cheese on top and place back in the oven for an additional 5 minutes or until cheese melts. Serve hot and enjoy.
