8-10 Large Manicotti Shells
1 Pound Cooked, Shredded Pork Shoulder
1 Cup Ricotta Cheese
2 Scallions, Chopped
2/3 Cup Black Olives, Sliced
1 Jalapeno Pepper, Chopped
Sprig Freshly Cut Parsley
2 Garlic Cloves, Minced
1/2 Cup Shredded Pepper Jack Cheese
1 1/2 Cups Fresh Made Hot Salsa

Cooking Directions:
Preheat your oven to 400 degrees and spray a large baking dish and set aside. In a large pot cook manicotti shells via instructions on package. In a large mixing bowl add shredded pork, sliced scallion, ricotta cheese, sliced olives, chopped jalapeno peppers, parsley sprig, minced garlic and your fresh hot salsa. Use a small spoon to carefully stuff the cooked manicotti shells with the shredded pork mixture. Place the stuffed manicotti shells in the sprayed baking dish and place shredded cheese on top along with some the rest of the salsa. Bake uncovered for about 20 minutes, or until cheese is melted. Serve hot right out of the oven.
