2 Pound Pork Tender Loin
4 Fresh Cloves Garlic, Minced
1 Teaspoon Cayenne Pepper
1 Fresh Squeezed lime
1 Tablespoon Vegetable Oil
1 Large Onion, Chopped
2 Jalapeno Peppers, Softened, Seeded, Sliced
8-10 Hoagie Rolls Or Dinner Rolls
1 Cup Salsa Verde
1 Cup Pepper Jack Cheese
1 Cup Cilantro, Chopped

Cooking Directions:
Line a large baking sheet with foil and preheat your oven to 375 degrees, set aside. In a large mixing bowl combine, garlic, pepper, fresh squeezed lime juice and oil, rub this mixture onto the pork very generously, set aside. Now spread the onions and sliced jalapeno peppers on the foiled baking dish. Place the pork on top of the onions and peppers and roast in our preheated over for at least 45 minutes or until the pork is tender and juicy. Now remove the pork and wrap in foil or cover with something to keep it warm. The preparation for the rolls is pretty easy. Split each roll and place face up on a Cookie sheet. Toast in oven at 350 for 5 minutes. Now get your pork and slice 1/4 inch thick slices. Place 1 slice of pork on each face up roll. Spoon the onion jalapeno mixture from the roasting pan on top of the pork slices and do that for all sandwiches. Place the cheese, cilantro and salsa on top. Serve warm and enjoy.
