Cooking Directions:
You want to use e deep Fryer for this dish. Also its easier to cut the skin if its frozen or partly frozen. Preheat your deep fryer to 375. Cut the skin into strips, size is your choice. I usually do about 2 to 2 1/2 inches in length and about 1/3 to 1/2 inch thick makes them easy to work with and i know the cooking time for that size. Now season your strips with salt and be generous. Cover the strips and refrigerate at least 1 hour. Place each piece into the deep fryer, cook until crispy and golden brown about 5-7 minutes. Place done skin on a bed of paper towels to drain excess oil. Season with more salt, Serve warm.
