3 Tablespoon Extra-Virgin Olive Oil
1 Cup Onion, Chopped
Pinch Of Salt And Pepper
1/2 Pound BBQ Pulled Pork, Prepared
1/2 Cup BBQ Sauce
8-10 Large Flour Tortillas
1 Cup Shredded Pepper Jack Cheese
1/3 Cup Thick Salsa, No Juice
Sour Cream [Optional]
Guacamole [Optional]

Cooking Directions:
Put 2 tablespoons extra virgin olive oil in a large skillet and warm over medium high heat. Once hot add the onion season with salt and pepper until they are translucent but still crunchy. Add the meat and heat everything well by tossing. Add the BBQ sauce and mix well . Set to the side. Coat a heavy skillet with rest of oil over medium heat. Put in 1 tortilla and cook one side until its golden brown. Take it off the skillet and do the same with the others. Once all are done place browned sides up and fill with your toppings. When done place non cooked side down in skillet and place another tortilla atop that one and brown. Press down filling with a spatula, will also help to cook. Flip and cook so both sides get evenly heated. Serve hot and enjoy.
