2 Tablespoons Vegetable Oil

1 Small Onion, Minced
3 Cups Cooked Shredded Pork
3 Cloves Garlic, Minced
8-10 Fresh Corn Tortillas
1 Cup Shredded White Cheddar
1 Can Whole Tomatoes
1/3 Cup Tomato Paste
1 Cup Chicken Broth
Minced Jalapeno [Optional]
Sour Cream [Optional]
Cilantro sprigs [Optional]

Cooking Directions:
In a large saucepan add the oil, heat until hot on medium heat. Add the onion, garlic, salt and pepper, along with the cooking mixture, stir until well mixed and onions become translucent. Add tomatoes, paste, broth, chile's and sugar. Bring to a boil, reduce to simmer and cover, cook for 15 minutes. In a mixing bowl add pork and sauce mixture. Dish filling out evenly among tortillas. Roll mixture in tortillas and bake for 30 minutes at 350, or until tortillas or golden brown. Top with garnishes and enjoy.
