1 Pound Lean Shredded Pork Loin
1 Medium Onion, Chopped
1 Can Taco Sauce
1 Teaspoon Chili Powder
1 Teaspoon Cayenne Powder
1/2 Cup Black Olives, Sliced
Extra Virgin- Olive Oil
4-6 Fresh Flour Or Corn Tortillas
3 Cups Shredded Lettuce
1/2 Cup Pepper Jack Cheese
1 Tomato, Wedged
2/3 Cup Sour Cream

Cooking Directions:
In a large pot add pork along with cold water just enough to cover, with a pinch of salt and pepper, simmer for 40 minutes. Pork should shred with a fork now. Add shredded pork with onion, chili powder, cayenne pepper and taco sauce to a large skillet, cover and simmer cook on low heat for 15-20 minutes. Until all ingredients are blended. During last minute add in the sliced olives. To create a delicious tostada, top tostada with lettuce, and a generous amount of shredded pork, top pork with pepper jack cheese, Tomato wedges and sour cream and garnish with Optional toppings.
