Spicy Sausage Burrito

Ingredients:
6-8 Medium Chorizo Sausage Links, Whole
1 Cup Black Beans
1 Medium Green Bell Pepper, Whole
1 Medium Red Bell Pepper, Whole
1 Medium Yellow Bell Pepper, Whole
3/4 Head Lettuce, Torn
1/2 Cup Salsa [Your Favorite]
2 Cups Cold Sour Cream [Optional]
2 Cups Guacamole [Optional]
8-10 Large Flour Tortillas Or Corn
1/2 Cup Of Diced Jalapenos

Cooking Directions:
Now if you're going to use your outdoor gas or charcoal grill go ahead and preheat the grill and lightly oil the surface. Put the whole peppers on the grill and cook. Turn the meat often so you don't burn one side. Once evenly cooked and dark remove and place it in something that will seal closed. Set aside. Place the sausage links on the grill and cook until golden brown on all sides. Move the links once golden brown to the edge of the grill away from the direct heat. Allow to cook thoroughly. About 12 minutes. Cook the bean on the stove top or grill burner, drain and set aside. Once peppers are cool, peal off the skin, remove seeds and stems now slice them up. In a large mixing bowl combine the beans, salsa and peppers mix well. Set aside for later use. Now that the sausages are done slice them up and add them to the pepper mixture. Warm the tortillas up and give them heaping spoon fulls of the sausage, lettuce and cheese. Top with diced jalapenos, sour cream or guacamole if you like. Serve warm.
